Finding a truly great crab cake isn't easy.
Most just don't taste that great... not to mention the unhealthy ingredients and that they are fried to oblivion in inflammatory vegetable oil.
But a GREAT crab cake - one packed with big chunks of lump crab, donning a perfectly golden-brown exterior and just barely held together with creamy mayonnaise, egg and a little breading - is a delicacy that will have you pining for more.
Over the years, I tried a number of times to make a truly great crab cake with Paleo-friendly ingredients, but I just wasn't able to hit the mark.
That is, until... I had a happy accident with two unlikely ingredients (coconut and cauliflower) that I finally created what I believe is the perfect grain- and gluten-free Paleo crab cake.
