Nearly 15 years ago, I began creating healthy makeovers of classic comfort foods.
I was following a very restrictive diet at the time to improve a health condition – and I missed those foods! But I also thought that if I could master the process, others might be interested.
I
started with desserts. And to be honest, those first few years did not produce the best results!
At the time very few people had even heard the term “gluten free.” There were no products to model and no recipe books to follow. It was all trial and error – replacing and swapping ingredients, adjusting ratios, tweaking baking times, temperatures and preparation methods.
But as
the years went by, I began to have success.
Finally, I was able to match the taste, texture, rise, crumb and sweetness you love about your favorite desserts – but WITHOUT the grain, gluten, carbs and sugar you don’t!

But we always knew those recipes could be even better – and even easier to make.
So, we never stopped improving… adding new recipes to the collection… making preparations easier… making every recipe tastier… and making sure each one is as healthy as it could be.
