Keto Cream Cheese Pancakes Recipe

Ingredients
4 ounces cream cheese, softened
4 eggs
Optional: a pinch of vanilla or cinnamon
Preparation
1. Add the eggs and cream cheese to a blender. If using vanilla or cinnamon, add it now.
2. Blend until completely smooth — this takes just a few moments.
3. Allow the batter
to rest briefly while you heat a skillet or griddle over medium heat.
4. Lightly butter the hot surface. Pour about 2 tablespoons (⅛ cup) of batter onto the skillet.
5. These pancakes spread easily and cook up very thin — that’s exactly what you want.
6. Cook for 1–2 minutes on the first side, just until lightly golden.
7. Carefully flip and cook for another minute or so on the second side.
8. Once you get a feel for the batter, adjust the size as you like. Plate and finish with your favorite topping —
low glycemic berries, a drizzle of keto syrup or a light dusting of low-carb sweetener.
