Paleo Egg Muffins Recipe
Total Time: 35 mins Servings: 12
Ingredients
12 large pastured eggs
½ medium organic onion, chopped
½ cup organic salsa
2 tsp virgin coconut oil
2 oz organic grass-fed cheddar cheese (optional)
16 oz grass-fed beef (85%)
Instructions
In a cast iron skillet, heat coconut oil. Add chopped onion and sauté until translucent.
Add ground beef
and cook until browned. Drain excess fat.
Line a muffin pan with unbleached liners. Divide the beef-onion mix evenly into 12 muffin cups.
In a bowl, beat eggs until frothy. Pour over the beef mixture.
Top each cup with a spoonful of salsa and shredded cheese (if using).
Bake at 375°F for 20–25 minutes.
Cool, store in a glass container, and reheat as needed!
