This week’s featured recipe is a Provençal-style classic made with New Zealand Green-Lipped Mussels — a clean, sustainable superfood rich in vitamin B12, selenium, iron, and
omega-3s.
They’re simmered gently in a crisp dry white wine, infused with organic garlic and fragrant tarragon, then finished with a drizzle of high-quality extra virgin olive oil for richness and depth.

Mussels Provençale Recipe (Healing Gourmet Style)

Ingredients
- 2 pounds frozen Green-Lipped New Zealand Mussels, debearded
- 4 cloves organic garlic, chopped
- 2 Tbsp. chopped fresh tarragon leaves
- 1 Tbsp. organic, grass-fed butter
- 2 Tbsp. extra virgin olive oil
- 2 whole organic shallots, finely chopped
- 2 cups dry
organic white wine
Preparation
- Heat the olive oil in a stockpot over medium heat.
- Add the shallots and garlic and cook until shallots soften.
- Add the wine, bring to a boil, and stir in the mussels.
- Cover the pot and cook about 6 to 8 minutes. Remove mussels with a slotted spoon to a large
bowl.
- Bring the cooking liquid to a simmer, whisk in the butter, and stir in the tarragon.
- Season with salt and pepper to taste, then pour the sauce over the mussels and serve immediately.
