And while those sweet, ripe strawberries needed nothing more than a quick rinse in the colander, my mom served them with a dip that made them other-worldly.
The dip was as simple as it was delicious - an equal mixture of cream cheese and Marshmallow Fluff-
nothing more.
The problem?
It was jam-packed with sugar - not to mention corn syrup and artificial flavors!
And it was really hard to resist, once you started dipping those juicy, red berries into the fluffy "cheesecake" dip.
So I knew I had to recreate it... without the sugar, corn syrup, and all the other junk.
This simple and delicious recipe is one I know your whole family will love.
And with just 38 calories and less than a gram of sugar per serving... you won't have to swim extra laps in the pool
or wear out the wheels on your roller skates to justify indulging in this sweet summertime treat!
"Cheesecake" Strawberries
Yield: 40 servings
(One serving = two medium strawberries plus ½ Tbsp. dip)
Ingredients
2 pints organic strawberries
4 Tbsp. organic grass-fed salted
butter
2 tsp. organic vanilla extract
2 Tbsp. organic heavy cream
8 ounces organic cream cheese
Preparation
Bring the cream cheese and butter to room temperature.
Add all ingredients to a medium mixing bowl. Using an electric mixer, beat on high until fluffy. Serve chilled with fresh berries and keep refrigerated.
