pork tenderloin, a lean and tender cut that pairs beautifully with the creamy, savory sauce. The dish starts with crisping up pastured bacon in the Instant Pot, lending a smoky depth to the base of the sauce. The pork pieces are then seared to golden perfection, locking in their juices before they’re cooked under pressure to achieve that tender,
fall-apart texture in just 30 minutes. Sautéed onions and crimini mushrooms add a robust earthiness to the dish, complementing the richness of the heavy cream and the brightness of dry white wine. The sauce is thickened with a

Recipe

Serves:
4 INGREDIENTS - 2 tsp. Coconut Secret Coconut Aminos
- 1 pound pastured pork tenderloin, cut into 2" thick chunks
- 3 slices pastured pork bacon, chopped
- ½ small white onion, diced
- 8 ounces organic crimini mushrooms, sliced
- ½ cup organic heavy cream
- ½ cup dry white wine
- 1 tsp. sea salt
- 2 Tbsp.fresh chopped parsley
- 2 Tbsp. grass-fed butter
- 1 tsp. arrowroot
DIRECTIONS - Add the bacon to the Instant Pot vessel and turn to Saute.
- Cook 3-5 minutes to cook through. Remove cooked bacon to a plate.
- Add the butter and melt. Ass the pork pieces in batches and brown on both sides. Remove seared pork pieces to the plate.
- Add the onion and mushrooms to the pot and cook 2-3 minutes.
- Pour in the wine and salt, and stir to deglaze the pan.
- Place pork pieces and bacon over the mushroom-onion mixture.
- Close and lock the lid. Set Pressure to HIGH and Time to 30 minutes.
When the timer beeps, do a quick release. - Remove a cup of the
liquid and place in a small saucepan over medium heat.
- Sprinkle the arrowroot over the broth, whisking.
- Slowly add the cream, while continuing to whisk. Mixture will thicken.
- Return cream sauce to the pot with the pork mixture and stir to
combine.
- Garnish with parsley and serve.
