On a recent trip to our favorite neighborhood Italian restaurant, we were greeted at the door by a wave of garlicky aroma. And it didn’t take long to find out where it was coming from…
Before we could say “Bongiorno!” our waiter placed a basket of hot-and-fresh, butter-drenched, parmesan-topped “Garlic Knots” on the table before us.
Since we generally avoid grains and excess carbs, we normally say, “No bread please.”
But he had already set the basket down… and, well, just one couldn’t hurt, right?
So, we passed the basket around and dug in, hardly speaking until we had licked our fingers clean.
If you’re familiar with these traditional pizzeria favorites, you know just how addictively delicious they can be. But you probably also know they’re loaded with carbs and made with inflammatory wheat and unhealthy oils.
That’s why, a few days later, we set out to re-create this beloved classic comfort food with good-for-you ingredients and a guilt-free nutritional profile.
We're very proud to say the experiment was a success!
